Ingredients

4.5cups cooked red lentils--or other colors--about 400 gr dry
5 cups water
1 tsp oil
1 large thinly sliced onion
4 crushed garlic cloves
3 tsp coriander powder
3 teaspoonns cumin powder
3 teaspoons crushed red pepper
2 teaspoons cardamom powder
1 tsp cinnamon
3 teaspoons tumeric powder
1 teaspoon salt
1 tablespoon lemon juice
1 can light coconut milk
Directions
Makes about 6 cups--6 big servings
Wash lentils, cook til soft in about 5 cups water.
Dry roast all spices for about three minutes in a fry pan, set aside. Put in 1 tsp oil, fry onions and garlic til fragrant and well cooked, add roasted spices, cook and stir careful not to burn, another 3 minutes.
Decide if you like the moisture in the lentils, take out some water if you think there is too much. Add roasted spice-onion garlic mixture and coconut milk, stir well and cook together about 5 minutes. Add lemon juice, check for salt.
Eat with basmati rice, or veggies, or pita bread.
