This no-fail, simple baked haddock recipe will be a hit every time, even with NO FISH eaters!

Ingredients

    4 haddock fillets, clean, rinse and pat dry
    1/2 stick butter, melted
    3/4 roll of Reduced Fat Ritz crackers, crushed
    dash of black pepper or lemon pepper(to taste)
    1 tbsp (1/3 squeezed) lemon juice to taste
    1/2 tsp. dried or fresh parsley (optional)

Directions

Preheat oven to 350.
Melt butter in small glass bowl, add Ritz cracker crumbs and combine gently. Spray shallow baking pan with cooking spray, put a few cracker crumbs in pan. Lay haddock in pan, cover with remaining cracker crumb mixture, sqeeze lemon & sprinkle parsley over fish.
Bake at 350 for 10-20 minutes, watch closely, as fillet size varies greatly, don't over cook! remove when fish is white and flakes easily. makes 4 servings, 1 fillet per serving

    Definitely quick and easy. Would have like exact measurements in the recipe as I only used 3/4 lb haddock and think it was less than the recipe called for. Next time will reduce amount of crackers/butter. - 8/8/11
