Introduction

Ingredients

Sauce:
1/4 cup hoisin sauce
1/4 cup lemon juice
1 tablespoon oil, any type
2 teaspoons sugar
1 teaspoon ginger root, minced
1 clove garlic, minced
For the salad:
10.56 oz package soba noodles (300g)
1/2 red bell pepper, julienne slivers
1/2 yellow bell pepper, julienned
1/2 green bell pepper, julienned
1/2 cup sliced cucumber (peeled or unpeeled)
3 green onions (scallions) thinly sliced
1/2 cup salted peanuts, chopped
Chopped cilantro (optional)
Fresh or dried chili peppers (optional)
Directions
Sauce/Dressing: Mix all ingredients for sauce together, and stir until sugar is dissolved; set aside.
Salad (Noodles, etc.)
1. Follow cooking instructions for soba, or, in a 5-6 qt pan, bring about 3 quarts water to a boil over high heat; add noodles and cook uncovered, for less than 5 minutes (might even be just 3, check that noodles are barely tender to bite). Drain and, if eating cold or at room temperature, rinse with cold water until cool. Drain well.
2. In a serving bowl, mix noodles, bell pepper,cucumber, onions. Stir dressing and add to salad.
3. Sprinkle with peanuts and chopped cilantro.
To this recipe, and with extra sauce, one can add crumbled tofu for increased protein, and the combination of veggies, for more crunch and fiber, is endless!
