Ingredients

    1 whole egg
    1 egg white
    3 spears fresh asparagus

Directions

1. Beat the egg and the egg white together vigorously until well blended and slightly frothy.

2. Pop the asparagus into a steamer for 5 minutes until cooked but firm.

3. Spray a small pan or omelette pan. Pour in the egg mixture. Cook until browned then flip and cook other side.

4. Place the omelette on a plate, place the asparagus spears on one side then fold omelette in half.

5. Add pepper to taste. (This can be added to the egg mixture prior to cooking - also chopped parsley and chives).

    i sliced the asparagus thin, sprayed the pan with butter flavored PAM, and sauteed the vegs before adding the eggs & a little ground pepper..cooked it like a pancake..it was great..thanx. - 2/13/11
