Introduction

Number of Servings: 15

Ingredients

    1.5 cups canned pumpkin
    .5 cups mashed banana
    4 eggs
    1-1/3 cups non-fat powdered milk
    4 tsp pumpkin pie spice (to taste)
    .5 cup splenda
    1 cup grated carrot
    .75 cups whole wheat flower
    .25 cups oat or wheat bran
    .75 cups golden raisins
    .25 cups sunflower seeds (hulled)
    2 tsp baking soda
    2 tsp vanilla or vanilla substitute

Directions

Combine all ingredients in large bowl and mix well. Spray muffin tin with Pam and spoon each cup about 3/4 full. Bake at 350 for 20-30 minutes. Makes about 15 muffins.

    This was a HUGE hit at my house... super yummy. I didn't have carrots, so I used more pumpkin puree, and I also replaced the raisins with dried cranberries... my neice, who is super picky, LOVED them. I'll make a loaf for Thanksgiving. Great! - 11/24/08
