Ingredients

2 tbsp olive oil
1 large onion, chopped
2 ribs celery, chopped
6 cloves garlic, minced
2 tsp. coarse sea salt
2 tsp oregano
6 oz. white wine
2 tbsp butter
1 10 oz package spinach, chopped
1 14 oz jar marinated artichokes, drained well, chopped
4 cups chicken stock
1 cup water
2 tbsp flour
125 g light cream cheese
dash of hot pepper sauce
Directions
Heat oil in pot. Add onion, celery, garlic, salt and oregano. Cook until all veg is translucent.
Add the wine and let the alcohol boil out for about 5 minutes, add the butter.
Add the spinach and cook and stir until wilted. Add the artichokes.
Add the broth. Bring to a boil. In the meantime, combine the water and flour in a small bowl or mason jar. Add to the boiling soup, stirring constantly. This will thicken it a little.
Finish with the cream cheese and hot sauce.
For a gourmet treat - serve with parmesan crackers. Serve 6 hungry people or 8 as a starter/lunch portion.
