Introduction

Ingredients

2 medium mahi mahi filets
1 tbsp extra virgin olive oil
1 tsp ground ginger
2 cloves garlic, minced
1 juice from a lime
1/8 cup lite soy sauce
1 tbsp honey
1 tbsp dry red wine
1/8 tsp cayenne pepper (more or less to taste)
Salt and Pepper
Directions
1) In a gallon zipper bag, combine all ingredients except fish. Squish to combine. add fish and seal, refrigerate at least 4 hours or overnight.
2) Squeeze all air out of zipper bag, or seal in a vacuum sealer and store in the frezzer. Deforst and grill, following below instructions.
3) Spray grill with non-stick cooking spray, then preheat to 475F. Cook filets about 4 minutes on the first side, then turn and cook another 2-4 minutes, depending on thickeness of your filets.
