Introduction
I made this 'swap' for my fiance who loves the Shari's Loaded Hashbrowns (and loaded in fat & calories too!). I made it this morning and he loved the cheesiness and actually enjoyed it more than Shari's! Feel free to mix in other veggies or use shredded potatoes! Ingredients

3 Potato's - Red or Yellow, small-medium size
1 Cup Diced Onion
2 teaspoons olive oil
1T Salt
1T Black Pepper

1/2C Sour Cream
1/2C Cream Cheese, Fat Free
1tsp Olive Oil
1oz Cheddar Cheese
Directions
In a large bowl, toss in cubed potatoes, diced onion, olive oil, salt and black pepper.
In a small pot combine 1/2C sour cream, 1/2c cream cheese, tsp olive oil & a slice of cheddar cheese (gives it color and a little more flavor).
In skillet heat potato mixture to med-high then set aside. In small pot with cheese mixture, heat until slightly boiling/bubbling.
In a dish or bowl, layer potatoes then cheese mixture, then potatoes. Serve! Makes about 1/2 cup, per person.
