Ingredients

    turkey, 93% lean 1 lb. ,2 medium onions chopped, 1 cup fresh mushrooms (optional), 18 corn tortillas, mozzarella cheese, part skim milk 16 oz., 2 10oz. cans of old elpaso enchilada sauce or 1 big can

Directions

mix mushrooms, turkey burger, and onions and cook in frying pan. layer meat and vegie with cheese and sauce into 3 layers in a 13 by 9 pan. put sauce on bottom and top of casserole too. use 6 tortillas to separate each layer. Bake at 350 or until hot all the way through. put cheese on top. you can use less cheese. I just like alot of cheese. makes 10 servings
