Introduction

Ingredients

2 lamb shoulder chops
1.5 cups lemon juice
1 small onion, diced
4 tsp Cavender's All Purpose Greek Seasoning
(1 tsp reserved)
2 tbsp light mayo
.25 oz herb flavored feta cheese
3 whole-wheat pitas
Directions
Place the lamb chops (whole), diced onion & 1.5 tsp seasoning in a baking dish - marinate in lemon juice, reserving 1 tbsp juice for later. Refrigerate for at least 10 minutes - flip & add an additional 1.5 tsp seasoning. Refrigerate another 10 minutes.
Turn oven on broil & move rack to the highest slot. Broil the chops & onion (do not drain out the lemon juice!) 7 minutes each side. After 7 minutes, flip the chops. I usually flip the chops about 3 times, or until brown. Depends on how well done you prefer lamb.
While the lamb is broiling, mix the remaining lemon juice, seasoning & mayo - refrigerate while the lamb cooks (May need to adjust to your taste preference.)
Heat the pitas in the toaster oven.
When the lamb is done, cut the meat off the bone into bite size pieces. Place 1/3 of the lamb & onion mix onto a warm pita - top with 1/3 of the sauce & feta.
This recipe is easily doubled - make approx 3 servings as is - excellent leftovers! Enjoy!
