Ingredients

    1 1/2 lbs boneless, skinless Chicken breast, cut into bite size pieces
    2 cans black beans, undrained
    2 cans Rotel tomatoes, undrained
    1 can corn, drained
    1 pkg taco seasoning
    salt to taste if desired

Directions

Brown chicken in pan sprayed with olive oil spray. Add beans, tomatoes, corn and taco seasoning and simmer for 30 minutes. Serve over brown rice
