Introduction

This is something we whipped up with leftovers on Sunday Morning. This is something we whipped up with leftovers on Sunday Morning.

Ingredients

    1 Cup Egg Substitute
    5 oz. turkey breakfast sausage
    1 artichoke heart chopped
    1/4 large red bell pepper
    2 green onions
    2 oz. white cheddar cheese
    2 slices avocado

Directions

Cook crumbled ground turkey until browned. Add artichoke heart, green onions and red bell pepper and cook another 2 minutes until heated. Add egg substitute and cook until eggs are done. Split into two servings, top with 1 oz. of cheese for each serving and heat in microwave until cheese is melted. Top each with 2 Tbsp. fresh salsa and 1 slice of avocado. Enjoy!
