Easy fried rice perfect topped with stir fried veggies! Add 1/4 cup cooked egg subsitute for protien and you have a quick meal! Buy frozen steam cook rice to reduce cooking time. Ingredients

    1 TBS finely chopped carrot
    1 TBS finely chopped celery
    1 TBS finely chopped onion
    1 cup cooked long grain white rice
    3/4 TBS soy sauce
    3/4 TBS water
    1 tsp canola oil

Directions

Combine soy and water, set aside. Heat oil over medium high heat. Add carrot, celery and onion, cook for about 2 minutes. Add rice cook for about 2 minutes. Remove from heat and add soy/water mixture.
