What to do with those left over mashed potatoes!!! What to do with those left over mashed potatoes!!!
Number of Servings: 6

Ingredients

    2 Cups mashed potatoes
    1 small onion, raw
    1 large egg, raw
    1/3 cup flour, any kind
    non-stick spray
    salt and pepper to taste

Directions

Mix all ingredients together. Spray skillet with non-stick spray (pam). Dip out patties to desired size. I usually make 6. Fry until brown on one side then flip over and brown the other side like pancakes. Make sure they are done in the middle.
