Introduction
I found this recipe in a summer Good Housekeeping magazine and used it for my turkey leftovers from Thanksgiving. Their serving size listed 2 enchiladas, but I only do one with 1/2 c black beans as my side. Ingredients

12 oz turkey meat
1 large can corn
1 container (8 oz) reduced fat sour cream
1 1/2 c shredded reduced fat (2%) Mexican Cheese blend.
12 (6 in) corn tortillas
1 can (10 oz) enchilada sauce
1 c salsa
Directions
Preheat oven to 400 degrees F. Spray 13" x 9" baking dish with nonstick cooking spray.
In large bowl, combine turkey, corn, sour cream, and half of cheese. Stack 5 tortillas at a time on damp paper towel on microwave safe dish. Top with another damp paper towel and microwave on high for 30 minutes to soften tortillas.
Place about 1/3 cup turkey mixture on each tortilla and roll up tightly. Arrange in baking dish, seam side down. Repeat with remain tortillas and filling.
In bowl, combine enchilada sauce with salsa, pour over tortillas to cover. Top with remaining cheese and bake 15 to 20 minutes or until cheese melts and enchiladas are heated through.
**These freeze easily.
