Introduction

Ingredients

    1/4 tsp. Canola oil
    1/4 tsp. chopped Garlic
    1/4 cup each diced Carrots, Red Pepper, Celery, and onion
    Salt and freshly ground Black Pepper
    1 pound 90 percent lean ground beef
    1/4 cup shredded Parmesan
    1/4 cup low-soduim Chicken broth
    1 Lg. Egg
    1 cup cooked brown lentils
    2 cups packed spinich leaves, steamed,drained, and chopped
    Cooking spray

Directions

Serves 5 6oz pieces

1.Preheat oven to 350. Heat oil in a saute' pan over medium heat. Add garlic and all the vegetables except spinich and saute' for 4 mins. Sprinkle with salt and pepper to taste.
2. In a large bowl, break up beef well with your hands. Stir in cooked vegetables, Parmesan, broth and egg. Mix well. Add the lentils and mix. Add spinach and mix again. If you wish you can add some more salt and pepper.
3. Coat a 3 by 8 inch loaf pan with cooking spray. Place meat mixture in pan and push down. Bake 35 mins or until internal temp. reaches 140F.
Let meatloaf rest in pan for 15 mins. before slicing
