Ingredients

    1 10 oz. package spinach
    1 cup part skim milk shredded mozzarella cheese
    6 eggs, beaten
    1/2 cup chopped onion
    Cooking spray
    Salt & pepper to taste

Directions

1.) Make sure spinach is thawed out, strain it
2.) Cut up the onion
3.) Spray with cooking spray the bottom of a 9 inch pie plate. Add the spinach and cheese. Pour the eggs over the top. Can add salt and pepper to taste.
4.) Cook at 350 degrees for 30 minutes or until it becomes firm and top begins to brown.

    Very Good
    This turned out great! I added half a red bell pepper, finely chopped to give the fritatta a little more flair. I think next time I will try some mushrooms! - 9/9/09
