Ingredients

100% pure canned pumpkin
whole wheat flour (or oat, soy, etc..)
egg whites
protein powder
baking soda
splenda
fat free whipped cream (5 cal)
cinnamon
ginger (or pumpkin pie spice)
Directions
mix: 1/3 cup flour, 1/2 scoop protein powder, 1/3 cup egg whites, 1/2 tsp of cinnamon and ginger (or pumpkin pie spice), and 1/2 tsp of baking soda in a bowl.
In a separate bowl mix 1/4 cup of pumpkin and splenda to taste. Heat in microwave for two minutes.
Pour flour mixture onto a griddle and to make individual crepes. Once cooked (like a pancake only thinner) assemble the crepes and pumpkin together on a plate and top with fat free whipped cream. Best if you spread pumpkin on crepe then roll up.
