Ingredients

    5 med. Parsnips, peeled and sliced
    5 small Carrots, sliced
    3 med. Turnips, peeled and cubed
    1 Lg. Sweet Potato, peeled, cubed,
    1 small Rutabaga, peeled and cubed
    1 Lg. Sweet Onion, cut into wedges
    2 Tbsp. Olive oil
    1 Tbsp. minced fresh Gingerroot.
    1 tsp. Salt
    1/2 tsp. Pepper
    1 Cup suger free or reduced sugar Maple sryup. The darker the better. Dark Maple syrup has more flavor.
    Cooking spray to spray baking sheets

Directions

24 1/2 cup servings with only 71 calories
1. Place the fisrt seven ingredients in a large resealable plastic bag: add the oil,ginger root, salt and pepper. Seal the bag and shake to coat. Arrange vegetables in a slingle layer in two 15 in x10-in x 1-in. baking pans coated with cooking spray.
2. Preheat oven to 425. Bake ,uncovered vegetables for 25 mins., stirring once. Drizzle with syrup. Bake 20-25 mins longer or until vegetables are tender, stiring once.
