Introduction

This is a soup I make often in the cold months.
You can add cheese if you want it more savory

Number of Servings: 4

Ingredients

    2 cups Broccoli
    2cups Cauliflower
    1 tab. chopped onion
    2 carrots
    celery 1 strip
    1 tab Italian seasoning
    1 tab. Smart Balance
    1 cup. Milk 1%
    2 tea. corn starch
    1 can chicken stock
    4oz low fat cheddar cheese optional

Directions

Chop vegtables into bite size peaces. Melt smart balance in large pot, saute onions till starting to get tender, add celary and carrots saute for 10 minutes on low heat. Add broccoli, cauliflower & chicken broth, salt and pepper to taste. Add Italian seasoning, or fresh herbs of your choice. Bring to a boil, turn down to simmer, and cook till tender. Add cornstarch to milk. Bring soup back up to boil and and milk mixture string constantly. Cook ten more minutes, add cheese if desired and serve.
