Introduction

Ingredients

    3 cups tomato sauce(either home made or jar)
    4 bonesless skinless chicken breasts
    2 ounces Parmesan cheese (grated) 1 cup
    4 oz. Mozarella, shredded (1 cup)
    2 oz. turkey Pepperoni, sliced thin

    You can substitute mushrooms, peppers or sausage for the pepperoni.

Directions

1. Adjust oven rack to middle position and preheat to 450 degrees. Spread the sauce in a 9 by 13 baking dish.
2. Pat chicken dry wiht paper towels. Season with salt and pepper. Spread the parmesan in a shallow dish and coa chicken with it. Lay chicken on top of the tomato sauce. Bake for 15 minutes.
3. Sprinkle mozzarella and pepperoni over the chicken. Increase oven temp to 475 degrees and continue to bake until cheese melts and chicken registers 160 on an instant-read thermometer, about 7 minutes longer.

According to the original receipe, this makes 4 servings, but with pasta, I would say it really makes 6 servings. It is simply too much to eat the breast with cheese on it and that much pasta.
You can make it more diet friendly by using low fat cheese, less cheese, and adding eggplant, mushrooms or peppers instead of the pepperoni.
