Number of Servings: 10

Ingredients

    1 1/4 pound lean ground turkey
    1 cup chopped onion
    1 cup chopped bell pepper
    1 can stewed tomatoes
    1 t garlic salt
    1/2 t pepper
    2 t chili powder
    8 c cooked brown rice
    1 can (1 lb.) whole-kernel corn, drained
    1/2 c low fat grated cheddar cheese

Directions

Saute ground turkey, onion and bell pepper breaking up meat with fork until meat is fully cooked. Add tomatoes and seasonings. Bring to a boil and simmer, uncovered, for 15 minutes. Add cooked rice and corn to ground-turkey mixture and pour into a 4-quart casserole (or two 2-quart casseroles). Sprinkle with cheese, cover and bake in preheated 350-degree oven for about 30 minutes. Sprinkle with paprika.
