Introduction

Ingredients

Pillsbury refrigerated Pie Crust
frozen spinach, 10 oz pkg
6 baby carrots, sliced thin
1/4 C chopped onion
2 whole eggs
2 egg whites
1/2 C non fat yogurt
1/2 C cottage cheese, 1.5%
1/2 C 4 blend cheese, 2 %
nutmeg, paprika, pepper, salt to taste
Directions
Prepare and bake empty pie crust for 5 minutes at preheated 425 oven - set aside to fill
Filling: cook spinach, carrots, onions in micro wave. Drain well, squeeze excess water out, make sure it is dry using paper towel.
Mix together eggs, yogurt, cottage cheese
Combine spinach mixture, egg mixture and shredded cheese, leaving a sprinkling of cheese for the top.
Put in pie shell and bake at 400 for 10 minutes then lower to 350 for additional 30 minutes.
Sprinkle spices, nutmeg, paprika, on top with cheese before baking.
Let pie cool before cutting.
Makes 1 pie - 8 servings.
