Ingredients

    4 cups Spinach, fresh
2 cups Mushrooms, fresh, cut into 1/4 in. cubes, or sliced as you prefer
1/2 cup Craisins (sweetened, dried cranberries)
    1/4 cup Almonds, sliced
1 cup Sweet Red Pepper, chopped
    1/2 cup Feta Cheese, crumbled
8 Tbsp Newman's Own Lighten Up Light Balsamic Vinaigrette Dressing

Directions

Rinse spinach and pat dry. Remove stems if preferred (I don't, it takes too much time). Add spinach to a large salad bowl. Chop the mushrooms and peppers and add to the salad bowl. Add in all of the remaining ingredients and toss thoroughly.
.
If you're looking to turn this into a meal, you might add a torn up slice of low sodium ham or a cup of cubed, grilled chicken (not included in nutritional facts).

Everyone loved it! It was a hit at my church function. I think I like the Kens salad dressing over the others for the vinaigrette. I also tried the raspberry walnut vinagrette, which everyone liked as well. I might try blue cheese instead of feta next time, with pecans. - 11/19/12

    Very Good
Very tasty! I'm never very convinced by fresh mushrooms, though. Made a vinaigrette with olive oil and pomegranate vinegar for this, and it was excellent! - 3/29/11

    Incredible!
Delicious! I will make this again!
P.S. I used only 4 Tbsp of Dressing the second time I made this salad and liked it better. :)
