Introduction

I decided to make my Mum's old fashioned Boiled Fruit cake healthy, after quit a bit of testing i have finally come up with this Anti-cholesterol recipe. Everytime i make this cake i change the fruit - it works everytime! Ingredients

    2 Cups water
    3 Cups Raisins (or any dried fruit)
    1 Cup Dates (you can also add walnuts)
    200 ml Olive Oil
    200 gr Honey (or any old jam)
    2 tsp Mixed Spices

    2 Cups wholemeal SR Flour
    1 Cup Psyllium Husks
    1 Cup Rolled Oats
    4 Eggs lightly beaten

Directions

Boil water, fruit, honey, oil and mixed spices for 3 minutes. Cool, had mixture to remaining ingredients
Line 12" square tin with Bake paper, also smooth top with Bake paper and leave onto cook, in 180 degrees oven for 50 minutes.
Turn out immediatly and wrap in tin foil to cool, keeps the cake really moist.
Cut 8x4 slices.
