Ingredients

    1 lb dry, green split peas
    32 oz container reduced sodium broth (chicken/veggie work well - about 4 cups)
    6 cups water
    1 cup diced onion
    1 cup diced parsnip
    1 cup diced carrot
    1 cup diced radish
    1 cup diced celery
    1/4 cup diced leek
    2 sprigs fresh dill weed, finely chopped
    2 sprigs fresh flat-leaf parsley, finely chopped
    1 tsp garlic powder
    1 tbsp kosher salt, or to taste
    1/2 tsp black pepper, or to taste

    In my grocery, these fresh veggies and herbs are sold together in a "soup pack". If you can't find this exact mix, it's OK.

Directions

Dice all veggies and put in large pot. Add dry green split peas to pot. Add broth and water. Stir to mix well. Bring to boil. Stir again, cover, lower heat and simmer for 1 1/2 hours, stirring occasionally. After 1 1/2 hours of simmering, add garlic powder, salt, pepper, parsley and dill. Stir, cover and simmer another 10-15 minutes, stirring occasionally. Serve hot.

Makes 10 one-cup servings.
