Introduction

My Dad's favorite Christmas fruitcake recipe! My Dad's favorite Christmas fruitcake recipe!
Number of Servings: 45

Ingredients

    1 cup unsalted butter (hard, block butter, not margarine)
    1.5 cups sugar
    3 eggs
    1 20 oz tin Peaches, drained
    3 cups flour
    1 tsp. baking powder
    1/2 tsp. salt
    3 cups sultana raisins
    1.5 cups dried cherries
    1 cup shredded coconut
    2 tsp. vanilla

Directions

Cream butter and sugar. Add eggs one at a time beating well after each addition. Add peaches. Beat in sifted dry ingredients. Lastly fold in remaining fruit and flavoring. Bake for 3 hours at 275 deg. or until a toothpick inserted in the center comes out clean.
