Ingredients

    6 oz Shrimp, peeled
    1/4 tbsp low sodium soy sauce
    1/2 tsp rice vinegar
    1/4 c chicken broth (fat free)
    1 clove garlic
    15 slices ginger
    1/2 c red onion, in wedges
    1/2 c broccoli florets
    1.25 c snow peas, trimmed
    1.5 c mushroom slices
    1/4 c yellow bell pepper sliced
    1/4 c water chestnuts

Directions

rinse shrimp and drain
heat the soy sauce, rice vinegar and chicken broth over medium heat.
add garlic & ginger and saute until tender
add all the veggies
when the veggies are cooked 1/2 way, add the shrimp
cook until shrimp are opaque
serve over rice (optional)
