Ingredients

    1 Package Baby Spinach or Spring Mix Lettuce
    1 Cup chopped mushrooms
    1 Red Bell Pepper cut into strips
    1 Green Bell Pepper cut into strips
    1 Yellow Bell Pepper cut inton strips
    1 Cup Cottage Cheese

Directions

Chop all vegetables. Pour spinach into large bowl. Put a hand full of spinach into smaller dish add vegetables to salad with cottage cheese and serve. Makes 4 servings.
