Introduction

this is a brown rice salad with dates & oranges. It is very hearty and can be used as a meal all by itself.

Number of Servings: 4

Ingredients

    16 dates, pitted & diced
    2 navel oranges, peeled, divided into segments, and cut into thirds
    2 scallions
    1/4 c. raisins
    1/4 c. minced fresh parsley
    1/4 c. extra-virgin olive oil
    2 tbsp lemon juice
    1/4 tsp cinnamon
    1/4 tsp cumin
    salt/pepper to taste
    *you can fool around with other spices as well, or add more of less of what you like. I usually add more cumin

Directions

boil 2 - 21/2 c. of water. Add brown rice, stir once and cook covered, over low heat for 35 - 45mins. When it's finished let it stand for 5 - 10 mins and then add the other ingredients.
serve at room temperature
I've found that this salad tastes better the day after!
