Introduction

Number of Servings: 9

Ingredients

    1 Cup Fiber One cereal ground into flour (this starts as 2 cups of the whole cereal and will grind down into the 1 cup needed or 4oz.)

    2 Cups White flour
    1 1/2 Cup Boiling water
    1/2 Cup Potato Flakes
    1 1/4 teaspoon Salt
    2 Tablespoons Canola Oil
    1 teaspoon Instant Yeast
    2 Tablespoons, Unsweetened Applesauce

Directions

Grind your fiber one into flour and mix with the flour. Measure out 2 cups and mix with boiling water until smooth. Let cool about 30 min. In a seprate bowl wisk together remaining flour and potato flakes, salt, and yeast, set aside till first mixture is cooled. Before combining two mixes add oil and applesauce to the dry mixture and then combine both together and knead till smooth. Place in oiled (I used the spray) bowl and let rest about an hour. Divide dough into 9 3oz. balls and you can use right away or let rise another 30 min. Roll each ball into about 7-8 in circles and dry fry for about 1 -1.5 min on each side. serve right away or seal in air tight containers. Do not let cool 100%, they dry out that way.
