Introduction

Remembered I had some spinach and roasted peppers in the fridge so this is what I came up with Remembered I had some spinach and roasted peppers in the fridge so this is what I came up with
Number of Servings: 2

Ingredients

    2 lg eggs
    2 egg whites
    1 Tbsp olive oil
    2 cups spinach
    1/4 cup roasted red peppers
    1 can mushrooms
    1/2 avocado
    4 tortillas
    2 T salsa

Directions

Chop red peppers, remove stems from spinach and drain mushrooms, dice avocado; set aside. Beat eggs with seasonings of choice (I like cayenne, garlic and black pepper); set aside. Heat olive oil in non-stick skillet. Add spinach, peppers, avocado and mushrooms. Saute until spinach is wilted. Add eggs and scramble until just cooked. Split egg mixture between four tortillas. Top with salsa, roll and serve. Two burritos per serving.
