Introduction

I love broccoli crunch salad, but have loathed the 400 calories per cup of some of my favorites. I've tried multiple times unsuccessfully to create a healthier version that still tastes like my favorite and that helps me enjoy eating these cruciferous powerhouses without the payback. I think I have finally got it.

Kudos to LIBRARYCAT for the initial recipe I found on Sparkrecipes that led me in the right direction. I still wanted something with less calories and sugars. . .and a bigger portion.

Ingredients

    For ease and getting it done, I use:
    (2) 10 oz bags prewashed fresh cauliflower (chopped)
    (1/2) 12 oz bag prewashed fresh broccoli (chopped)

    If you like broccoli better than cauliflower, switch. Total cruciferous should be about 1 1/2 lb (or to be exact: 26 oz)

    1/2 cup red onion (chopped)
    1 cup red seedless grapes, then sliced in halves
    1/4 cup Sunkist Almond Accents
    (you pick flavor--I used roasted toffee)
    1/4 cup Oscar Mayer Real Bacon Pieces
    (in the non-frig salad dressing aisle)

    Sauce:

    3/4 cup Hellman's Low Fat Mayonaisse dressing
    1/3 cup Splenda
    1/4-1/3 cup white distilled vinegar
    (vary to your taste and consistency of salad)


Directions

Combine chopped in bite-sized pieces cauliflower and broccoli in a large mixing bowl. Add red onion, split seedless grapes, almonds, and bacon pieces. Fold and mix together until evenly blended.

In a small bowl, whip mayo, Splenda, and vinegar until blended and creamy. Add to veggie mixture and fold in until evenly coated. Best chilled.

Enjoy!
