Ingredients

    1 cup Butternut Squash, cubed
    1 cup Cipollini Onions
    1 cup Brussel Sprouts
    1 cup Baby Carrots
    2.5 cups Sweet Potatoes, cubed
    1 cup Purple Potatoes, cubed
    1 cup Red Skin Potatoes, cubed

Directions

Toss Vegetables with 1 T Olive Oil.
Roast in a 400 degree oven for one hour.
