Ingredients

    * Del Monte Organic Diced Tomatoes, 14 oz can
    * Grape tomatoes, 12 oz
    * Garlic, 3 clove
    * Onions, raw, 1 medium (2-1/2" dia)
    * Olive Oil, 4 tbsp
    * White wine vinegar, .33 tbsp
    * Thyme, fresh, 1 tsp
    * Parsley, .67 tbsp

Directions

Slice grape tomatoes in half.
Slice garlic cloves.
Slice onion.

Toss tomatoes, garlic, onion with 2 tbsp of olive oil.
Season with salt and red pepper flakes.

Put in an oven safe pan and roast for 30-45 minutes in a 400 degree oven until tomatoes just begin to brown.

After roasting, remove roasted vegetables into a saucepan. Add can of diced tomatoes.

Partially puree with a stick blender.

Add 2 Tbsp olive oil, 1 tsp white wine vinegar, 1 tsp finely chopped thyme, 2 tsp finely chopped parsley and salt and pepper to taste.

Heat to blend flavors.

Serve over pasta of your choice.

Makes 4 half-cup servings.
