Fresh veggies make this a winner! Serve wrapped in lettuce, in a pita or make a whole wheat sandwich. Ingredients

1 lb. boneless skinless chicken breast, boiled and diced
1 large stalk celery, diced
2 green onions, diced
1 fresh jalapeno, seedless and diced
1 oz. walnuts
1/2 cup red pepper, diced
4 tbsb. fat free mayo
1 tbsb. lite mayo
Season to taste with Paul Prudhomme's Blackened Steak seasoning or your favorite seasoning
Directions
Add all veggies and nuts to chicken. Mix in both mayo. Mix in seasoning to taste.
