Ingredients

    Olive Oil, 2 tbsp
    Land O Lakes, Light Butter, Salted, 2 Tbsp, Peppers, sweet, red, fresh, 1 medium chopped
    Green Peppers (bell peppers), 1 cup, chopped
    Yellow Peppers (bell peppers), 1 pepper, large chopped
    Garlic, 2 clove minced
    Onions, raw, 1/2 cup, chopped
    Canned Tomatoes, 3 cups
    Green Chile Peppers, 1-4.5oz can
    Bird's Eye Broccoli Florets, 1 cup
    Heartland whole wheat penne, 4.5 cup
    Shrimp, cooked, 16 oz
    Basil, 1/2 tsp
    Rosemary, dried, 1/2 tsp
    Thyme, ground, 1/2 tsp
    Parmesan Cheese, 1/4 cup

Directions

Cook pasta according to directions and drain.
In another pan, heat olive oil and add butter. Saute the vegetables until tender. Stir in the tomatoes, chile peppers and spices and simmer for 10 minutes. Add the shrimp and pasta and top with parmesan.
Makes 6 servings.
