Introduction

Creamy-tasting, but no cream! A traditional French sauce which is excellent on poached eggs or chicken. Creamy-tasting, but no cream! A traditional French sauce which is excellent on poached eggs or chicken.
Number of Servings: 4

Ingredients

    2 Tbsp. flour
    2 Tbsp. unsalted butter
    2 cups chicken stock (low-sodium is fine)
    1/4 cup thinly-sliced mushrooms
    2 Tbsp. tomato puree

Directions

1. Melt butter in pan. Stir in flour. (This mixture is called a roux).
2. Gradually add chicken stock, stirring constantly so sauce remains smooth.
3. Stir in mushrooms.
4. Cook over very low heat for one hour. (A double boiler is ideal, but not essential.)
5. Stir in tomato puree and cook for two or three more minutes.

Makes 4 1/2-cup servings.
