Ingredients

* *Tilapia filet, 10.24 oz
* Red Ripe Tomatoes, 2 tomato, chopped
* Onions, raw, 1 medium (2-1/2" dia)
chopped
* Garlic, 3 cloves, finely chopped
* Olive Oil, 1.5 tbsp
* Lemon juice, 1 tbsp
* Pepper, black, to taste
* Salt, to taste
* 1/2 teaspoon ground cumin
* *Coriander leaf, fresh 2 tbsp
Directions
* In a large pan, heat olive oil
* Add onion and garlic
* Sautee til onions are trasparent, slightly brown
* Turn heat to medium
* Add tomatoes and coriander, and cook until
water dries slightly, and the mixture looks a bit
like a thick sauce
* Add cumin, salt, pepper and lemon juice and
cook for about 5 minutes
* Turn heat to medium low, add tilapia and cook
for about 10-15 minutes on one side and 10-
15 on the other - make sure it is cooked
thoroughly
* Serve fish in two plates and top with the pan
drippings/sauce
Makes 2 servings - we ate this with vegetable brown rice and steamed broccoli. Yum! Enjoy!

KASHMIR
I figured out after I'd already added the corriander that the recipe actually was calling for fresh Cilantro. I added mushrooms to the recipe. Ended up really bland. I might try it again when I have cilantro in the house, but will probably add other spices to it as well to give it more flavor. - 1/28/09
