    3 Large Zucchini
    2 tbsp Olive Oil
    3 tbsp freshly grated Parmesan Cheese
    Garlic and Herb Mrs. Dash


Serves Approximately 3.
Preheat Oven to 415.
Wash zucchini and trim ends.
Cut zucchini in half then slice length wise into 1/4 inch pieces.
Spray pan with cooking spray and lay out zucchini in rows across the pan.
Spray or brush a thin layer of olive oil on zucchini slices.
Sprinkle Mrs. Dash garlic and herb seasoning over zucchini slices. (This seasoming is flavorful but you can use quite a bit and I don't think it's too much.)
Bake zucchini for about 20 min, then increase temperature to about 445-450 degrees. Cook for an additional 10 min, or until zucchini is starting to lightly brown on the edges. (Cook time depends on thickness of slices so keep an eye on it while in the oven.)
Remove from oven and sprinkle parmesan cheese lightly across zucchini.
Cools quickly so be ready to serve close to removal from the oven.
