Ingredients

4oz. Salmon
1t. dried thyme
1t. brown sugar
1/2t. smoked paprika
Olive Oil (do not use extra virgin)
Directions
Brush salmon with drizzle of olive oil on both skin side and meat side.
Mix thyme, brown sugar, smoked paprika until blended. Brush on the herb mixture.
Brush top of slamon with another drizzzle of the olive oil.
Preheat oven 400.
On stove top, over medium heat, heat oven-proof pan/skillet, then place salmon skin side down on pan. Turn off the heat.
Once oven is hot and ready, place pan under BROILER, switch to broil mode (hot oven will help fish cook better) and broil 8 minutes.
Serve with a vegetable and brown rice.
Typically, I will steam the veggie and then use the water from this to cook the rice. Veggie water adds great flavor and nutrients to rice.
Carrot or Broccolini are great.
