Ingredients

    1 TBSP Vegetable Oil
    1 TBSP Flour
    1 TSP curry powder
    3/4 TSP salt
    4 (4 oz) boneless center-cut pork loin chops
    1 15oz can yams in light syrup, drained
    1 15ox can pear slices in pear juice, drained (reserve 1/2 cup pear juice
    1/2 TSP dried thyme
    1/8 TSP ground pepper

Directions

1. In a large nonstick skilled, heat the oild. In a large sealable plastic bag, mix the flour, curry powder, and 1/4 tsp of the salt. Add the pork and shake to coat.
2. Transfer the pork to the skillet, saute until cooked through, about 3 minutes on each side.
3. Meanwhile, cut the yams into bite-sized chunks; add to the pork with the pears, reserved pear juice, thyme, pepper, and the remaining 1/2 tsp of salt. Reduce the heat and simmer covered, about 5 minutes; uncover and simmer until the pork is cooked through, about 2 minutes longer.

    Made this for dinner tonight. It is a keeper! I didn't have canned yams, so I cut and boiled a sweet potato to add in it's place. Thanks for the tasty combination! - 2/14/09
