Introduction

Number of Servings: 4

Ingredients

    4 boneless skin less chicken breasts
    1 c. water
    fresh ginger, small part cut off, peeled & diced
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1 tsp crushed red pepper flakes
    1/4 tsp Tastefully Simple Garlic Garlic
    1/4 tsp Tastefully Simple Onion Onion
    1/2 jar Smuckers (12.75 oz.) sugar free Apricot Preserves

Directions

This makes 4-6 servings depending on if you are serving children or adults.

1. Place the 4 boneless skinless chicken breasts in large, deep pan on stove top. Add enough water so base of pan is covered and part way up the chicken. (This keeps chicken moist and from burning).
2. Add all seasonings except preserves to top of chicken. (You can adjust the seasonings to your taste preference. I kind of just sprinkle it on. )
3. Cook for about 20 minutes on medium heat on stove top with the lid on. You can turn the chicken over midway to keep it from burning and sticking to bottom of pan. If water is gone, add a little more.
4. When chicken is fully cooked. Remove and dice on cutting board. Discard seasonings left in pan and any fresh ginger pieces on the chicken.
5. Return chicken to pan and add half a jar of Smuckers Peach preserves to chicken and stir.
6. Cook for a few minutes on stove top on medium low until is chicken is fully coated with preserves.

This goes really well with sweet potato fries.
