Introduction
Anyone cooking for just one or two? I am! I've seen many good recipes that make alot but unfortunately my hubby isn't fond of any kind of leftovers! I have to create recipes for two or three to avoid leftover servings. This is one of my creations. Serve with a salad, whole grain rolls and some fruit and dinner is done! Ingredients

1/2 tsp. olive oil
1/2 c. onion, fine dice
1 cup Fit & Active reduced sodium chicen broth
3 c. small broccoli florets or thawed frozen chopped broccoli
1/2 c. evaporated skim milk
1/8 tsp ground red pepper
2 oz. kraft 2% shredded cheese
1/4 c. nonfat sour cream
Directions
1. Heat oil in medium saucepan over medium high heat until hot. Add onion; cook and stir 4 minutes or until translucent.
2. Add broth, bring to a boil over high heat. Add broccoli; return to a boil. Reduce heat; simmer covered, 5 minutes or until broccoli is tender.
3. Whisk in milk and red pepper. Remove from heat; stir in cheese until melted. Stir in sour cream.
Serves 2 (1-1/2 cup serving size)
season with salt and pepper as desired. ( salt not included in nutritional value)
