Introduction

This can be lower in fat by using reduced fat sour cream and cheese. This is great for family dinners and can be easily made ahead and frozen for those busy nights when you don't have time to prepare. Ingredients

    2 lbs. ground beef
    2 packages of taco seasoning
    4 cloves of garlic
    1/2 teas. cayenne
    1 1/2 C water
    20-24 low carb Mission brand tortillas
    24 oz. jar of salsa
    1 C green onion
    16 oz. sour cream
    6 cups of 4 cheese mexican shredded cheese

Directions

1. Preheat oven to 375 degrees.
2. Brown ground beef, drain and add taco seasoning and garlic with water. Simmer 10 min.
3. Begin layering a 9"X13" pan with tortillas.
4. Then layer salsa, meat, onion, sour cream mixed with cayenne and a little milk to make it more easily spreadable and cheese.
5. Lay down more tortillas.
6. Repeat step #4
7. Top with final layer of tortillas and any remaining salsa.
