Ingredients

5 to 6 cooked boneless, skinless chicken breasts - Shred meat in processor or chop finely.
1 8 oz.-pkg. fat free cream cheese softened
2 T. chopped chives
1-8 oz. fat free cottage cheese
1 Tbs. Italian Seasoning
4 cup Shredded Mozzarella Cheese
1 jar Spaghetti Sauce
1 Cup Shredded Cheddar Cheese
1/2 c. parmesan Cheese
Directions
Chop cooked chicken in processor, or chop finely with knive. In separate bowl mix fat free cream cheese and cottage cheese together, add chopped chicken. Add Italian Seasoning and chives and 1 cup of Mozzarella Cheese to mixture.
Follow package instructions on Manicotti shells and let cool. Stuff shells and place in baking pan sprayed with Pam. Cover with spaghetti sauce and bake at preheated 350 degree oven for 30 minutes. Take out of oven and cover shells and sauce with the rest of the Mozzarella Cheese and Shredded Cheddar and bake 5 more minutes. Take from oven and spread 1/2 cup of parmesan cheese over pan before serving. Makes 8 servings
