Ingredients

    2 cups of all bran cereal
    2 cups of boiling water
    3 tbsp of baking soda
    1 c. margarine @ room temp
    3 cups granulated sugar
    4 eggs
    2 cups of either raisins or chopped dates
    1 qt buttermilk
    5 c. cake/pastry flour
    2 tsp salt
    4 cups bran flakes

Directions

Mix all bran, boiling water, soda in bowl. Set aside.
Cream margarine, white sugar, then add eggs,beat. Add all bran mixture, raisins or dates, buttermilk, stir to combine. Beat in flour, salt until no lumps left, Fold in Bran Flakes. Batter is rather thin, thickens as it sits in fridge. Allow to rest in fridge for few hours. Spoon into muffin tins to 7/8 full. Bake at 400 degrees for 20 minutes or 18 for medium muffins. These are very moist muffins. Makes 48 to 60 muffins depending on medium or large muffins. Medium muffins 150 calories, 3.8 Total fat, 2.2 g fibre. Large muffins: 187.5 calories, 4.7 Total tat, 2.7 g fibre 48 muffins.

    This recipe looks great but high in fat due to margarine and sugar. I will try applesauce instead of margarine. - 1/18/10
