Ingredients

    6 red potatoes
    1 package frozen spinach, thawed and drained
    4 garlic cloves, chopped
    1/2 cup low-fat sour cream
    1/2 cup Parmesan cheese, grated
    salt and pepper to taste

Directions

Cut the potatoes into eights and steam for about 15 minutes. Spray a small pan with cooking spray and saute the chopped garlic until aromatic. Set aside. Add the spinach to the potatoes for the last few minutes of cooking.

When the potatoes are fork tender, place them in a large bowl with the rest of the ingredients and mash to desired consistency. Season with salt and pepper. Makes four side dish servings.
