Ingredients

    8 cups chopped mushrooms
    1/4 cup olive oil
    2 15.5 oz cans of Mexican Stewed Tomatoes
    4 cups cooked and hot brown rice

Directions

saute mushrooms in olive oil stirring occasionally. When just barely done add Mexican Style Tomatoes and heat through.

Serve over hot brown rice. Enjoy

Makes 6 servings with 2/3 cup rice per serving
