Something I whipped up for my grandma's birthday dinner / going away party this weekend. My grandparents are off to Spain tomorrow and are taking a side trip to Tangiers, so what better way to celebrate! Something I whipped up for my grandma's birthday dinner / going away party this weekend. My grandparents are off to Spain tomorrow and are taking a side trip to Tangiers, so what better way to celebrate!

Ingredients

    ½ teaspoon ground cumin
    ½ teaspoon fresh-grated ginger
    pinch ground cloves
    ¼ teaspoon ground saffron
    ¼ teaspoon salt
    ¼ teaspoon black pepper
    Juice and grated zest of one orange
    1 ¾ cups vegetable broth
    ½ cup dried cranberries
    1 ½ cups whole wheat couscous

Directions

Bring cumin, ginger, cloves, saffron, salt, pepper, orange zest and juice and vegetable broth to a boil.
Add the dried cranberries, reduce the heat and simmer 5 minutes.
Return the mixture to a boil, stir in the couscous and remove from heat
Cover, and let stand 5 minutes. Fluff with a fork and serve.
